Yummy moist white-chocolate blondies with added Tru-Blu Cinnamon Spice Cookies for an extra kick of sweetness and spice!

When it comes to deserts, the blondie is a deliciously kept secret that many grandmas and aunts keep to tantalise the sweet tooth’s of their grandkids or their nieces and nephews. 

The just-as-tasty cousin of the world famous brownie, the blondie is a dessert snack that lesser known but just as delicious as its darker half. So if you’re a brownie baking master, this blondie recipe won’t be too much of a deviation from your regular brownie baking using most of the same ingredients

This recipe stands out from other blondie recipes as we use dried Cranberries, chopped Macadamia nuts and of course our delicious Tru-Blu Cinnamon Spice Cookies to add some extra sweetness to our blondie batch to compliment their crunchy-on-the-outside, fudgy-on-the-inside texture that makes them perfect for an after dinner treat, a cheat day snack or even a to compliment your next family games night. 

INGREDIENTS

1/3 Cup Butter 

3/4 Cup White Chocolate

1 Large Egg

1 tsp Vanilla Extract

1/4 Cup Brown Sugar 

1/2 Cup Sugar 

1 Cup All Purpose Flour 

1/4 tsp Baking Soda

1/2 Cup Dried Cranberries 

2/3 Cup Chopped Macadamias 

1 Cup Tru-Blu Cinnamon Spice Cookies (crushed)

Instructions

  1. Preheat the oven to 180°C (350°F) and line an 8″x8″ pan with baking paper
  2. Melt the butter and white chocolate together
  3. Beat the egg, brown sugar, sugar and vanilla extract together until light
  4. Mix in the chocolate mixture
  5. Mix in the flour and baking sod
  6. Stir through the cranberries, macadamias and crushed cinnamon spice cookie pieces
  7. Bake for 20-30 minutes. The outside edges will be golden, the middle will sink slightly and the top will be crackly. The middle will also wobble slightly but this is a good as it will be nice and fudgy!
