If you’re looking to a way to cool off during this sweltering summer months, then FREEZE! These sweet, delicious cookie pops made with Tru-Blu Chocolate Chip Cookies will stop the heat in its tracks and keep you and the fam as cool as a cucumber.

This recipe uses cream cheese, Tru-Blu Chocolate Chip Cookies and Melted Chocolate and is so fun to make that you might want to get the kids involved to help mix, roll the mixture into balls, and to dip the pops into the melted chocolate to get a nice even chocolate coating to add an even sweeter crunch to these tasty pops. 

With just 3 ingredients, our Cookie Pop recipe is simple enough to make with the kids so you can make it a day and enjoy some quality family time while you wait for these cookie pops to come out of the freezer.

INGREDIENTS

1 block of cream cheese

1 cup of Tru-Blu Chocolate Chip Cookies

1 cup of Melted white chocolate (or dark chocolate)

Instructions

  1. Place the cookies in a food processor

  2. Turn the machine on until the cookies are broken down into crumbs

  3. Add the cream cheese and turn the machine on again for 1 minute or until the mixture forms a ball

  4. If the dough seems to dry, add additional cream cheese, 1 tablespoon at a time, until mixture comes together and can be rolled to form a cookie pop

  5.  Take 1 tablespoon of the cookie mixture and form it into a ball using the palm of your hands

  6. Place cookie pops back into the fridge to cool for 30 minutes

  7. Roll the cookies again to tighten their structure

  8. If using, place a little honey on the end of the cake pop stick and push it into the cookie pop

  9. Return cookie pops to the fridge to firm up
