Cookies cheesecake bars

If you love cookies and cheesecake, then good news, you can combine them into one dessert!  Great for an after school snack, a cheat day treat or even as a “just because you have an itchy sweet tooth” moment, these Cookie Cheesecake bars are simple to make and big on taste.

With this easy recipe, you can amaze everyone from your housemates to your houseguests and serve up a fudgy, rich, creamy bar of goodness with little prep time and a reasonable baking time.

INGREDIENTS

For base:

1/2 Cup Tru-Blu Vanilla Cookies

1 and 1/4 Cups Digestive Biscuits (graham crackers), Crushed

1/3 Cup Butter, Melted

For cheesecake:

1/2 Cup Cream Cheese

1/4 Cup Yoghurt

1 tsp Vanilla Extract

1 Large Egg

1/4 Cup Icing Sugar

1 and 1/2 Cup Tru-Blu Vanilla Cookies

Instructions

  1. Preheat the oven to 180°C (350°F) and line an 8″ tin with baking paper.
  2. Crush together the biscuits, cookies and butter.
  3. Press into the base of the prepared tin.
  4. Beat together the cream cheese, egg, icing sugar, vanilla extract and yoghurt.
  5. Pour over the base.
  6. Place in the oven for 15 minutes.
  7. Take it out and sprinkle the remaining crumbled baked cookies over the top and put back in the oven for a further 20-25 minutes.
  8. There should be a light wobble.
  9. Allow to cool to room temperature and then place in the fridge for at least 4 hours but it is better the next day.
